GINGERBREAD PROTEIN COOKIES

Our Madagascan Vanilla protein powder pairs perfectly with the gingerbread spices in this recipe to make the perfect treat for the holiday season!

 

INGREDIENTS:

2 cups spelt flour
1 scoop Madagascan Vanilla PERFORM
2 tsp ginger powder
2 tsp cinnamon power
1/2 tsp nutmeg powder
1/2 tsp clove powder
1/2 tsp salt
1/2 cup maple syrup
1/2 cup peanut butter
1/2 cup apple sauce

 

METHOD:

1. Gently combine the flour, protein powder, spices and baking soda in a bowl and set aside. In a separate bowl mix together the maple syrup, peanut butter and applesauce until evenly combined.

2. Slowly transfer the wet ingredients into the dry and combine everything well until it starts to form a dough. Roll the dough out between two sheets of wax paper until it is about a 1/4 inch thick.

3. Cut the dough into cookie shapes and place an inch apart on a baking tray lined with parchment paper. You can pop this into a freezer for a few minutes to firm up if required.

4. Transfer into a pre heated oven and bake at 160C / 325F for 10-12 minutes. The cookies should be golden and firm to the touch on the outside but still soft in the middle. Allow to cool for a few minutes before serving!
